Week 284: Cozy Chicken Soup

Happy Thursday :-)

Thank you guys for such a warm welcome back!! It was so fun to be back in the kitchen cooking for all of you and your families, I hope there were a ton of smiles around the dinner table Tuesday night :-) We easily worked though a few minor kinks in the new kitchen, but the larger space really came in handy as I was able to get 14 of the 20 customers off the waitlist. As the season moves on, I hope to keep ordering open longer and serve more customers each week.

On the menu for TUESDAY, OCTOBER 14th is COZY CHICKEN SOUP WITH WILD RICE & TOMATO BASIL BREAD. This cozy chicken soup is made with fresh seasonal veggies, a hearty wild rice mix and a deliciously creamy (non-dairy) broth. I am so ready to move into fall flavors and a cozy bowl of this soup is just perfect!!

The soup begins with sautéing celery, carrots, onion, and garlic in a little bit of olive oil. Once softened, diced sweet potato, mushrooms, and fresh thyme are added.

Next, the wild rice mix, shredded chicken, and homemade chicken stock are added and the soup simmers until the rice is tender. Wild rice is lower in calories and higher in protein than other rice. The soup is finished with coconut milk and fresh kale. Coconut milk adds the creaminess and slight sweetness to the soup. The soup is garnished with fresh parsley.

The bread companion on the menu this week is my brand new TOMATO BASIL BREAD. This will quickly become your new favorite bread!!  This delicious bread is flavored with tomato, fresh basil, and Parmesan cheese and sugar-tomato glaze adds the perfect touch to the crust.
