I couldn't be happier to send this email and finally post a new menu with ordering link. And while I love an endless summer, the longer the hiatus went on, the more impatient I became to get back into the kitchen and cook for all of you :-)
The menu for TUESDAY, OCTOBER 4th features TORTILLA SOUP & GREEN CHILE CHEESE BREAD. Tortilla soup is a big customer favorite, I couldn't resist starting off the season with it. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour.
My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added. Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.
The bread companion this week is my Green Chile Cheese Bread. The bread features the delicious flavors of the Southwest ...smoky, slightly spicy roasted green chiles and creamy cheddar cheese. It's a perfect companion to this soup!
