Week 266: Italian Wedding Lasagna Soup

New Year, New Soup

The first menu of 2025 is a soup mash up that I saw online and couldn't wait to put my own spin on it.  Their soup was a combo of Italian wedding soup and a white lasagna soup, however I thought it would be even better with my red lasagna soup.  And like I predicted, it tasted awesome as you get all the flavors of a hearty lasagna plus delicious meatballs. 

On the menu for TUESDAY, JANUARY 14th is ITALIAN WEDDING LASAGNA SOUP & ROSEMARY FOCACCIA.  Our new favorite mashup is loaded with tender meatballs, tomatoes, fresh spinach, Italian herbs, and a melty cheese combo that takes it over the top. 

The soup begins with browning the meatballs in the oven to intensify their flavor. The meatballs are made with ground turkey, Italian sausage, breadcrumbs, garlic, fresh parsley, milk, and egg. Meanwhile, we sauté red peppers, onions and garlic in the pot with a little olive oil.

Once the veggies are soft, homemade chicken stock, tomato sauce, diced tomatoes and spices are added. After the soup begins to boil, broken lasagna noodles, fresh spinach, and meatballs are dropped in. Once the noodles finish cooking, the soup is garnished with fresh basil and parsley as well as a generous dollop of mixed lasagna cheeses that melt perfectly into the hot soup.

The bread companion this week is my ROSEMARY FOCACCIA. It's crisp on the outside yet soft and chewy on the inside. Extra-virgin olive oil gives the bread texture and flavor while fresh rosemary and flaked sea salt add the finishing touches to make this bread so unbelievably delicious.
