Week 255: Tortilla Soup

Happy Thursday!!

On the menu for TUESDAY, SEPTEMBER 17th is TORTILLA SOUP with ITALIAN HERB BREAD. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. Usually I start the soup season with this soup but I changed it up this year ... my apologizes for making you wait a few weeks to get to order it!!

My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added.

Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.

The bread companion this week is my ITALIAN HERB BREAD. This delicious bread is filled with garlic, butter and fresh herbs. This bread is a fan favorite and the fresh herbs in it will make a perfect compliment to your soup.
