Week 254: Italian Wedding Soup

Hello & Happy Thursday :-)

Thank you to everyone for being so understanding about the bread situation earlier this week.... for those of you not aware, one of my worst nightmares happened early Tuesday morning. The oven wasn't working so I could not bake bread for the 40 orders I needed to fill!!

I've dreaded something like that happening and for the first time in nearly 8 years, I could not deliver what I promised. But, because I have the most amazing customers, everyone took the news in stride and enjoyed their soups without their delicious bread. I heard lots of "oh no, that's my favorite bread," so I am making challah this week to make sure everyone gets their favorite bread!!

On the menu for TUESDAY, SEPTEMBER 10th is ITALIAN WEDDING SOUP and CHALLAH. My Italian Wedding soup is a rich chicken soup filled with lots of good things - fresh spinach, creamy pasta and plenty of delicious meatballs!

The soup begins with browning the meatballs in the oven to intensify their flavor. The meatballs are made with ground turkey, Italian sausage, breadcrumbs, garlic, fresh parsley, milk, and egg.

Meanwhile, onions, carrots and celery are sautéed in the pot. Once the veggies are soft, homemade chicken stock, white wine and orzo pasta are dropped in. After the pasta is cooked, fresh spinach, dill and lemon zest are dropped in to finish off the soup.

My bread companion this week is CHALLAH, a soft, eggy bread coated in everything bagel seasoning. This light and delicious bread tastes great with everything and this soup is no exception. In fact, my hubby got very excited when he heard about the menu combo for this week!!

Please note, there is a small chance I will have jury duty on Monday morning.  I will find out on Friday afternoon if I have to report, and if so, soup might need to be postponed a week.  I will let you know if this happens, the chance is very small but I felt I needed to let you know ahead of time just in case.
