Week 253: Gazpacho

Happy Thursday!

I don't know about you, but this heat is killing me!  And there's only one soup that can help us beat this heat .... Gazpacho.   Gazpacho is a cold soup made of raw, blended vegetables. It is widely eaten in Spain and Portugal, particularly during hot summers, since it is refreshing and cool .... which is exactly what we all need right about now :-)

On the menu for TUESDAY, SEPTEMBER 3rd is GAZPACHO and CHALLAH. This chilled tomato and vegetable soup makes a perfect lunch or light dinner.

My gazpacho is made with fresh tomatoes, cucumber, onions, garlic, red peppers, tomato juice, fresh lemon & lime juice, honey, a splash of red wine vinegar and fresh tarragon and basil.

Soup(er) Delivery

My bread companion this week is CHALLAH, a soft, eggy bread coated in everything bagel seasoning. This light and delicious bread will be perfect alongside a bowl of Gazpacho.
