Welcome to the last menu of the season .... hard to believe but another school year has flown by. And this one marks the graduation of my middle son and him joining his big sister at Penn State in the fall.
There's no way to put all these thoughts and feelings into a few cute sentences, so I'm going to skip it and tell you all about what I can easily write about .... the last menu of the season. And this menu features everyone's favorite soup and the perfect one to end the season with.
On the menu for TUESDAY, MAY 21st is TORTILLA SOUP with GREEN CHILE CHEESE BREAD. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. It's the perfect soup to end our year on! My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder.
Once softened, corn and black beans are added. Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.
The bread companion this week is my Green Chile Cheese Bread. We introduced this tasty bread last year and it's a perfect compliment to this soup!! The bread features the delicious flavors of the Southwest ...smoky, slightly spicy roasted green chiles and creamy cheddar cheese.
