Week 227: Tortilla Soup

Hello & welcome to the first menu of the season!!

I hope you enjoyed your summer, I really appreciate that everyone was understanding about my longer-than-normal summer break. We had a lovely time as a family going on some amazing trips, enjoying a few great concerts, but mostly I loved all the family time we got to squeeze in.

As my kids continue to get older and spend more time forging their own paths, I find the time we spend together as a family even more special. And, for some reason, I needed a ton of it this summer and had a hard time returning to work! But enough of that, you all are here to find out what soup and bread are on the menu this week.

The menu for TUESDAY, SEPTEMBER 12th features TORTILLA SOUP with GREEN CHILE CHEESE BREAD. Tortilla soup is such a big customer favorite, I couldn't resist starting off the season with it. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. And this menu features a brand new bread that will be the perfect compliment to my Tortilla soup.

My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added.

Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.

The bread companion this week is my brand new Green Chile Cheese Bread. Last spring my husband and I went to New Mexico to visit friends. We ate at this great diner and they sold their amazing recipes in a cookbook. And, if you know me, you know I'm a sucker for a new cookbook. And tucked inside this delicious cookbook, is the recipe for my new bread. It features all the delicious flavors of the Southwest ...smoky, slightly spicy roasted green chiles and creamy cheddar cheese. This bread will soon become your new favorite!!
