
Week 217: Cozy Chicken Soup with Wild Rice

On the menu for TUESDAY, FEBRUARY 28th is COZY CHICKEN SOUP WITH WILD RICE and MULTI-SEED BREAD. This cozy chicken soup is made with fresh seasonal veggies, a hearty wild rice mix and a deliciously creamy (non-dairy) broth. And with the weather fluctuating between winter and spring recently, I thought we would all enjoy a cozy bowl of soup regardless of the day's weather.
The soup begins with sautéing celery, carrots, onion, and garlic in a little bit of olive oil. Once softened, diced sweet potato, mushrooms, and fresh thyme are added.
Next, the wild rice mix, shredded chicken, and homemade chicken stock are added and the soup simmers until the rice is tender. Wild rice is lower in calories and higher in protein than other rice. The soup is finished with coconut milk and fresh kale. Coconut milk adds the creaminess and slight sweetness to the soup.
My bread companion this week is my MULTI-SEED BREAD. This delicious bread is dark, slightly sweet and has a satisfying crunch from the multi-seed topping. Not only is it fantastic fresh from the oven, if you can save some for breakfast it makes the best toast!!
