
Week 216: Lasagna Soup

They always say "time flies when you're having fun," which couldn't be closer to the truth as we reach another anniversary for Soup(er) Delivery and I reflect on this journey. This week marks six years of cooking for some of my favorite people in Cincinnati and it has been the most fun and rewarding experience.
Thank you for allowing me into your homes and dinner table every Tuesday evening. Cooking is my love language and to show my love and appreciation for my amazing customers, I'd like to serve the first soup I made at Soup(er).
On the menu for TUESDAY, FEBRUARY 21st is LASAGNA SOUP with ITALIAN SUPERMARKET BREAD. You get all the flavors of a delicious hearty lasagna in a comforting soup. It’s loaded with Italian sausage, tomatoes, fresh herbs and a melty cheese garnish that takes it over the top.
The soup begins with sautéing Italian sausage, red peppers, onions and garlic in the pot with a little olive oil. Once the sausage is crumbled and veggies are soft, homemade chicken stock, tomato sauce, diced tomatoes and spices are added.
After the soup begins to boil, broken lasagna noodles are dropped in. After the noodles finish cooking, the soup is garnished with fresh basil and parsley as well as a generous dollop of mixed lasagna cheeses that melt perfectly into the hot soup.
The bread companion this week is my ITALIAN SUPERMARKET BREAD. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of Italian bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is simple, but tastes anything but.
On the menu for dessert are OATMEAL RAISIN COOKIES. As a staple cookie in any baker's kitchen, my version will certainly not disappoint! These cookies are made with brown sugar, vanilla (a whole TBSP!), cinnamon, chewy oats, sweet raisins, and a secret ingredient that creates a soft and chewy cookie! They have moist and tender centers, with a slight crisp on the edges. - Jenny from Jenny Sue Delights
