
Week 210: Tortilla Soup

Hello & Happy New Year!!
I hope everyone had a wonderful holiday break, we had a lovely break down at the beach with family. And while the weather wasn't ideal, getting away with family to sleep in, snack on cookies and play tons of games and grudge tennis matches was just what the doctor ordered. I feel re-energized and ready to start 2023 ... and very excited to get back into the kitchen to cook for all of you!!
The first menu for TUESDAY, JANUARY 10th features TORTILLA SOUP with ITALIAN SUPERMARKET BREAD. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. It's a healthy hit, which makes it the perfect soup to serve after the food heavy holiday season.
My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added.
Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.
The bread companion this week is my ITALIAN SUPERMARKET BREAD. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of Italian bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is simple, but tastes anything but. This bread tastes fantastic dipped in the Tortilla soup!

I certainly enjoyed my time with Leo and his first Christmas and definitely indulged in desserts along the way!
