Week 200: Vegetable Soup with Basil Meatballs

I hope everyone enjoyed their long holiday weekend. We had a nice weekend here, despite all the rain, squeezing in lots of quality time with friends and family. Last week I promised a soup featuring meatballs and while scrolling through recipes, I found one that I haven't made for almost two years. I have no idea how this one slipped out of the rotation and I'm very happy to bring it back. It's a fan favorite soup .... it's delicious, hearty and filled with meatballs!!


On the menu for TUESDAY, SEPTEMBER 13th is VEGETABLE SOUP WITH BASIL MEATBALLS and ITALIAN SUPERMARKET BREAD. The soup begins with assembling the meatballs and browning them in the oven to intensify their flavor. The meatballs are filled with lean ground beef, fresh basil and parsley, breadcrumbs and egg. Meanwhile, diced onion, garlic, celery, and carrots are sauteed in a little bit of butter in the pot. Once softened, homemade chicken stock, tomato sauce and orzo noodles are added. The soup simmers until all the flavors are blended together and it's garnished with fresh parsley.


The bread companion this week is my, ITALIAN SUPERMARKET BREAD. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of Italian bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is simple, but tastes anything but.

 

On the menu for dessert are SWEET & SALTY EVERYTHING COOKIES! The cookie dough begins with browned butter - a favorite technique of mine that amplifies cookie flavor to next level deliciousness. Then I add in sea salt, butterscotch chips, chocolate chips and finally - chopped pretzels! These cookies are perfect for anyone that is a fan of sweet and salty food!
