Week 197: Tortilla Soup

Happy Thursday!

Hard to believe but another school year has flown by. And this one marks the oldest of my kids graduating and moving away to college in the fall. There's no way to put all these thoughts and feelings into a few cute sentences, so I'm going to skip it and tell you all about what I can easily write about .... the last menu of the season. And this one features all of your favorites :-)

On the menu for TUESDAY, MAY 24th is TORTILLA SOUP with ITALIAN HERB BREAD & PEPPERONI BREAD. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. It's the perfect soup to end our year on!

My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added. Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.

The two bread companions this week are my Italian Herb Bread and Pepperoni Bread. Both delicious breads are filled with garlic, butter and fresh herbs. And the pepperoni bread is finished with layers of tasty pepperoni. If your family loves pizza, they'll love this bread!!

For the final week before Soup(er) Delivery’s summer break, I’m bringing back one of my most popular items - BLUEBERRY LEMON PIE BARS. These bars start with an irresistible shortbread crust. Then I place a creamy filling on top that is a silky smooth lemon flavor with a few blueberries included. Finally, the bars are topped with crumbled shortbread pieces that offer a slight crunch!
