
Week 196: Chicken Artichoke Soup with Wild Rice

Happy Thursday!!
Spring has officially sprung here in Cincinnati so our menu matches our enthusiasm for this warmer weather :-) Last Tuesday our family enjoyed the Thai Laksa soup outside on our patio. And while it was a tad bit nerve racking to watch my youngest carry a soup bowl that far, it was so lovely to eat outside again. This week's menu will be perfect to enjoy dining al fresco!
On the menu for TUESDAY, MAY 17th is CHICKEN ARTICHOKE SOUP WITH WILD RICE and ITALIAN SUPERMARKET BREAD. This soup is light, healthy and brothy with a ton of vegetables, wild rice and artichoke hearts to enjoy.
The soup begins with sauteing onions, carrots, garlic, and celery in the pot with olive oil. Once softened, wild rice and chicken are added along with homemade chicken stock, artichoke hearts, and Italian spices and brought to a simmer.
The soup is garnished with fresh parsley, a drizzle of olive oil, and lemon juice for freshness.
The bread companion this week is my, ITALIAN SUPERMARKET BREAD. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of Italian bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is simple, but tastes anything but.
On the menu for dessert are STRAWBERRY CREAM COOKIES. They have a cream cheese filling and fresh strawberries creating a soft, buttery and incredibly moist cookie! ~ Jenny from Jenny Sue Delights
