
Week 195: Thai Laksa Soup

Happy Thursday!
This week's soup was first introduced last spring when we traveled the world through soup. It resembles my Thai Chicken Ramen Soup which always sells out fast, so I know you guys love these flavors. My version of Laksa has a strong Thai influence and is filled with many great flavors ---- lots of ginger, a little soy sauce, coconut milk and creamy peanut butter.
On the menu for TUESDAY, MAY 10th is THAI LAKSA SOUP with CHALLAH. This tasty soup begins with sautéing garlic, ginger, a little jalapeno pepper and green onions in sesame oil. Once softened, cubed butternut squash and homemade chicken stock are added.
Next, creamy peanut butter, soy sauce, fish sauce, diced broccoli and coconut milk are mixed in. The soup is finished with vermicelli noodles, fresh mint & cilantro, pomegranate arils and crunchy chickpeas.
My bread companion this week is CHALLAH, a soft, eggy bread coated in everything bagel seasoning. Everything tastes better with challah and this soup is no different!
On the menu for dessert are REESE’S PEANUT BUTTER COOKIES! These cookies are a dream come true for all peanut butter lovers. The cookies have a very soft and puffy element to them, which comes from adding pudding mix to the peanut butter based cookie dough. I add in chocolate chips, Reese Pieces and chopped up miniature Reese’s to finish up the recipe.
