
Week 194: Italian Wedding Soup

On the menu for TUESDAY, MAY 4th is ITALIAN WEDDING SOUP and PANE BIANCO. We are kicking off the last month of the spring soup season with a menu that features one of our favorite meatball soups .... This rich chicken soup is filled with lots of good things - fresh spinach, creamy pasta and plenty of delicious meatballs!
The soup begins with browning the meatballs in the oven to intensify their flavor. The meatballs are made with ground turkey, Italian sausage, breadcrumbs, garlic, fresh parsley, milk, and egg.
Meanwhile, onions, carrots and celery are sautéed in the pot. Once the veggies are soft, homemade chicken stock, white wine and orzo pasta are dropped in. After the pasta is cooked, fresh spinach, dill and lemon zest finish off the soup.
The bread companion this week is Pane Bianco. This delicious bread is filled with sun-dried tomatoes, parmesan cheese, and fresh herbs. Not only is it a beautiful bread, it tastes fantastic served with this soup.
On the menu for dessert are RASPBERRY CHOCOLATE CHIP DREAM COOKIES. A delicious and chewy, white chocolate cookie packed full of raspberry preserves, white chocolate chips and milk chocolate chips. As some of you know, I really like to bake with pudding mix in my cookies because it makes the cookie very moist. These cookies have white chocolate vanilla pudding mix in them!
