Week 188: Cozy Chicken Soup with Wild Rice

Happy Thursday!

On the menu for TUESDAY, MARCH 8th is COZY CHICKEN SOUP WITH WILD RICE and ITALIAN SUPERMARKET BREAD. This cozy chicken soup is made with fresh seasonal veggies, a hearty wild rice mix and a deliciously creamy (non-dairy) broth. And while warmer weather is on the horizon, I thought we could all still enjoy a cozy bowl of soup and this one fits the bill perfectly.

 

The soup begins with sautéing celery, carrots, onion, and garlic in a little bit of olive oil. Once softened, diced sweet potato, mushrooms, and fresh thyme are added. Next, the wild rice mix, shredded chicken, and homemade chicken stock are added and the soup simmers until the rice is tender. Wild rice is lower in calories and higher in protein than other rice. The soup is finished with coconut milk and fresh kale. Coconut milk adds the creaminess and slight sweetness to the soup.

 

The bread companion this week is my ITALIAN SUPERMARKET BREAD. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of Italian bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is simple, but tastes anything but.

On the menu for dessert is WHITE CHOCOLATE SNICKERDOODLE BLONDIES. Chewy, rich, and flavorful blondies are an indulgent dessert that are hard to resist! These blondies are like no other. They’re sort of like a cake and sort of like a blondie. Smack dab in the middle of those two heavenly dessert categories. The edges are chewy and the centers are soft. The white chocolate chips are plentiful and the sticky cinnamon-sugar swirl will make you crave more! - Jenny from Jenny Sue Delights
