Happy New Year!!
The first menu for the new year on TUESDAY, JANUARY 4th features TORTILLA SOUP with ITALIAN HERB. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. It's a healthy hit, which makes it the perfect soup to serve after the food heavy holiday season.
My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added. Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.
The bread companion this week is my Italian Herb Bread. This delicious bread is filled with garlic, butter and fresh herbs. This bread tastes fantastic dipped in the Tortilla soup!
