Welcome to the final menu of the season!
Hard to believe but the school year is wrapping up, and with that, so am I. Thank you for another wonderful winter through spring soup season...I am blessed to have the best customers and I can't tell you how much I love feeding your families each week. Enjoy your summer and I'll be back mid-August!!
The menu for TUESDAY, MAY 20th features SUMMER SQUASH SOUP WITH FRESH SALSA with ITALIAN HERB & PEPPERONI BREAD. This soup was a big hit last time it was on the menu, it's light, refreshing, and the tasty garnishes will make everyone in your family happy! And with warmer temperatures approaching, I know everyone will enjoy a delicious soup that reminds us of summer produce & flavors.
The soup begins with sauteing onion and celery in olive oil with cumin, salt and pepper. Once softened, summer squash, zucchini and diced sweet potato are added. Next, white wine and homemade chicken stock are incorporated.
Once the veggies are tender, a little bit of cream and cayenne pepper are stirred in. The soup is garnished with fresh salsa made with fresh tomatoes, red onion, fresh cilantro and lime juice. Homemade buttery croutons top off this delicious, summery soup.
The two bread companions this week are my Italian Herb Bread and Pepperoni Bread. Both delicious breads are filled with garlic, butter and fresh herbs. And the pepperoni bread is finished with layers of tasty pepperoni. If your family loves pizza, they'll love this bread!!
