
Week 168: Tortilla Soup

Hi all!
We have one last stop on our culinary tour of the world ... and this is also the last menu of the spring 2021 season. I will be taking the summer off to enjoy my family, but don't worry I have a stack of new soup and bread recipes that I plan on cooking so the fall season will be the tastiest yet.
Thank you so much for allowing me into your homes every Tuesday night. I am so humbled that you allow me to cook for your family, this job brings me so much joy and fulfillment. Enjoy your summers and see you in August!!
On the menu for TUESDAY, MAY 25th is TORTILLA SOUP with CHALLAH. This is my go-to soup when I need a fresh and tasty dinner that my whole family will devour. It's the perfect soup to end our year on! While there is very little available history about tortilla soup, it is known to have come from the Mexico City region of Mexico.
My tortilla soup begins with sautéing onions, red & orange peppers, garlic and zucchini in olive oil with cumin and chili powder. Once softened, corn and black beans are added. Next, homemade chicken stock, fire-roasted tomatoes, and tomato sauce are added. The soup simmers until all the flavors are blended and it's garnished with cilantro, shredded cheddar cheese and tortilla strips.
My bread companion this week is Challah, a soft, eggy bread coated in everything bagel seasoning. Everything tastes better with challah and since it's my most popular bread, I thought we'd end with it.
I am out of town this week, so there is no dessert on the menu.
