Week 165: Spring Chicken Chowder

Happy Thursday!!

On the menu for TUESDAY, MAY 4th is SPRING CHICKEN CHOWDER with ITALIAN SUPERMARKET BREAD.  This "ode to spring" chowder features fresh green vegetables, tender chicken and orange sweet potatoes for flavor and color.  

The chowder begins with sautéing onion, celery and garlic in a little butter with fresh thyme.  Once softened, bite-sized chunks of chicken, diced sweet potatoes, and homemade chicken stock are added and brought to a boil.  Finally, fresh asparagus and peas are added to cook.  The chowder is finished with a little cream, fresh parsley, lemon zest and fresh lemon juice.  

The bread companion this week is Italian Supermarket Bread. Just like the name says ... it's a fresh loaf of bread that tastes like the loaves of bread you used to be able to pick up from the supermarket. It has a crispy exterior with a nice chewy bite and is coated in sesame seeds. It is a simple, yet very tasty bread that will perfectly compliment this tasty chowder.

On the menu for dessert is one of my most popular items - Blueberry Lemon Pie Bars. These bars start with an irresistible shortbread crust. Then I place a creamy filling on top that is a silky smooth lemon flavor with a few blueberries included. Finally, the bars are topped with crumbled shortbread pieces that offer a slight crunch!
