Week 157: Ginger Meatballs in Coconut Broth

It's Thursday ...  time for another post from me! At least the snow arrived on a Thursday this time, not a Tuesday.  When it comes on a Tuesday, it adds just the right amount of surprise and stress to my busy baking mornings.  Luckily all the roads have been cleared in time for deliveries, I really appreciated your patience as we navigated this unusual weather.  And with the weather continuing to bring us more snow, this soup season keeps bringing us new breads.  This week's menu features a flavorful meatball soup with a brand-new bread, which was a huge hit with my test audience!!

On the menu for TUESDAY, FEBRUARY 23rd is GINGER MEATBALLS IN COCONUT BROTH and MULTI-SEED BREAD. Everyone loves a meatball soup and this one is no different ... a delicious and brightly colored broth filled with vegetables and tasty meatballs. You'll be pleasantly surprised how flavorful this soup tastes with an ingredient list that isn't very long.

The soup begins with browning the meatballs, a mix of ground pork & chicken, eggs, breadcrumbs, freshly grated ginger, garlic and a little bit of fish sauce, in the oven. Meanwhile, fresh ginger, garlic, lemongrass and red bell peppers are sauteed in vegetable oil in the pot. Once softened, homemade chicken stock, lite coconut milk, turmeric, lime zest and juice, fish sauce and sugar are added. The soup simmers until all the flavors blend together, then the meatballs are dropped in along with some baby spinach and cooked jasmine rice. The soup is garnished with fresh cilantro.

My bread companion this week is my brand-new MULTI-SEED BREAD. This delicious bread is dark, slightly sweet and has a satisfying crunch from the multi-seed topping. Not only is it fantastic fresh from the oven, if you can save some for breakfast it makes the best toast!!

On the menu for dessert are MINI TURTLE CHEESECAKES.  These decadent cheesecakes were one of my very first creations and are a huge hit. Out of all the items I bake, I love to bake and decorate mini cheesecakes because they are the perfect size, look fancy, and so delicious! These Mini Turtle Cheesecakes feature a thick graham cracker crust, vanilla cinnamon filling, and are topped with salted caramel sauce, toasted pecans, and chocolate drizzle. - Jenny from Jenny Sue Delights
