Week 153: Lasagna Soup

We mark another big milestone at Soup(er) Deliver this week, our 4th anniversary. Thank you for letting me feed your families each week, I am humbled that you enjoy my food as much as I do cooking it for you.

The traditional gift for this anniversary is fruit or flowers, so rather than waste my time on flowers I thought we could be creative in our definition of "fruit." And since a tomato is technically a fruit, in honor of my anniversary the menu features a "fruit" based soup to help us celebrate. It also happens to be the first soup Soup(er) offered!!

On the menu for TUESDAY, JANUARY 26th is LASAGNA SOUP with CHALLAH. You get all the flavors of a delicious hearty lasagna in a comforting soup. It’s loaded with Italian sausage, tomatoes, fresh herbs and a melty cheese garnish that takes it over the top. The soup begins with sauteing Italian sausage, red peppers, onions and garlic in the pot with a little olive oil.

Once the sausage is crumbled and veggies are soft, homemade chicken stock, tomato sauce, diced tomatoes and spices are added. After the soup begins to boil, broken lasagna noodles are dropped in. After the noodles finish cooking, the soup is garnished with fresh basil and parsley as well as a generous dollop of mixed lasagna cheeses that melt perfectly into the hot soup.

A vegetarian version of Lasagna soup is also available. This version begins with sauteing red peppers, onions and garlic in olive oil along with mushrooms, zucchini and squash. Once the veggies are soft, homemade vegetable stock, tomato sauce, diced tomatoes and spices are added. The soup finishes up just like the original version with noodles and garnishes.

The bread companion this week is my challah. This eggy, slightly sweet bread with it's salty topping will taste perfect alongside this soup.
