Week 150: Cozy Chicken Soup with Wild Rice

Hello and Happy New Year’s Eve!!

I hope everyone is enjoying their winter breaks.  We’ve spent a good bit of time doing the Triple F… referred to as Forced Family Fun by my kids.  At this point they can call it whatever they want, I’m just happy to get any time with them!!

Enjoy your New Year’s Eve celebrations tonight, I think we’re all ready to say goodbye to 2020.  And with 2021 around the corner, I thought it would be fun to have a new soup for the new year.

On the menu for TUESDAY, JANUARY 5th is COZY CHICKEN SOUP WITH WILD RICE and ROSEMARY FOCACCIA.  This cozy, chicken soup is made with fresh seasonal veggies, hearty wild rice and a deliciously creamy (non-dairy) broth.  January calls for warm, cozy bowls of soup and this one will quickly become one of your favorites. 

The soup begins with sautéing celery, carrots, onion, and garlic in a little bit of olive oil.  Once softened, diced sweet potato, mushrooms, and fresh thyme are added.  Next, the wild rice, diced chicken, and homemade chicken stock are added and the soup simmers until the rice is tender.  Wild rice is lower in calories and higher in protein than most rice.  The soup is finished with coconut milk and fresh kale.  Coconut milk adds the creaminess and slight sweetness to the soup. 

On the menu for bread is ROSEMARY FOCACCIA.  It's crisp on the outside yet soft and chewy on the inside. Extra-virgin olive oil gives the bread texture and flavor while fresh rosemary and flaked sea salt add the finishing touches to make this bread so unbelievably delicious.
