Week 148: Chicken Noodle Soup with Matzo Balls

Hello and Happy Thursday!

It's been quite a year ... and I think we've all tried to roll with it (imagine toilet paper for corny pun ) as best we can. Hanukkah begins next Thursday, so this week's menu will feature Chicken Noodle Soup with Matzo Balls, commonly referred to as "Jewish penicillin." Maybe if we all eat a big bowl of the soup we will feel better, remember all the things we can celebrate and be joyful for, rather than focus on what we're missing. I wish all of you who celebrate a very Happy Hanukkah filled with health, happiness and a much brighter new year!!

On the menu for TUESDAY, DECEMBER 8th is CHICKEN NOODLE SOUP WITH MATZO BALLS and CHALLAH. The soup is a simple one....whole amish chickens, quartered onions, celery sticks and more diced carrots than seems reasonable are dropped into a pot and covered with fresh water. Once the soup comes to a boil, it simmers for a few hours. Afterwards, the chicken is taken out, diced and dropped back in along with soft, pillowy matzo balls and thin egg noodles. While I put a fresh garnish on nearly everything I make, this soup I leave alone. It requires nothing.

My bread companion this week is Challah, a soft, eggy bread coated in everything bagel seasoning. Nothing goes together better than challah and chicken noodle soup with matzo balls!!

On the menu for dessert this week there are TWO deserts on the menu - SNICKERDOODLES and BOURBON PECAN CHOCOLATE CHIP COOKIES. Snickerdoodles are a timeless cookie, but in my kitchen they are so soft and thick. Oftentimes you come across a Snickerdoodle that is crunchy, but that is not the case with these! I am also offering a delicious new cookie that is sweet, salty, crunchy, chewy, flavorful and boozy! The Bourbon Pecan Chocolate Chip cookies are made with browned butter, one of my favorite baking techniques, buttered toasted pecans, topped with sea salt and are baked to perfection.
