Week 138: Summer Squash Soup with Fresh Salsa

This week's menu features SUMMER SQUASH SOUP WITH FRESH SALSA and PANE BIANCO. This soup was a big hit last summer, it's light and refreshing and the tasty garnishes will make everyone in your family happy!  And with warmer temperatures predicted through the week, I figured we'd serve one more summer-like soup before we fully turn toward fall flavors.

The soup begins with sauteing onion and celery in olive oil with cumin, salt and pepper. Once softened, summer squash, zucchini and diced sweet potato are added. Next, white wine and homemade chicken stock are incorporated. Once the veggies are tender, a little bit of cream and cayenne pepper are stirred in. The soup is garnished with fresh salsa made with tomatoes from my garden, red onion, fresh cilantro and lime juice. Homemade buttery croutons top off this delicious, summery soup.

The bread companion this week is Pane Bianco. This tasty bread is filled with fresh basil, sun-dried tomatoes, garlic and shredded cheese. It has a wonderful soft texture and is packed with flavor.

On the menu for dessert are RASPBERRY CHOCOLATE CHIP DREAM COOKIES. A delicious and chewy, white chocolate cookie packed full of raspberry preserves, white chocolate chips and milk chocolate chips. As some of you know, I really like to bake with pudding mix in my cookies because it makes the cookie very moist. These cookies have white chocolate vanilla pudding mix in them!
