
Week 135: Provencal Vegetable Soup

Sorry this post is later than normal....I'm having a little bit of trouble readjusting to my activity filled life. Life is returning to normal with the kids' schedules and I'm just playing a little catch up. And while I might be struggling with my busy schedule, I am totally loving the beautiful sunny, summer weather ... therefore this week's menu will be a celebration of fresh summer produce.
On the menu for MONDAY, JUNE 15th is PROVENCAL VEGETABLE SOUP with PANE BIANCO. Nearly every Western cuisine has a signature vegetable soup, this version comes from the south of France. It features a tasty broth filled with vegetables, beans and fresh herbs. The signature of this soup is a pesto-like condiment, called pistou, that's drizzled as a garnish which adds a jolt of fresh basil and garlic to each bite.
The soup begins with sauteing leek, garlic, celery, and carrots in the pot. Once softened, homemade chicken stock, fresh green beans, zucchini, and diced tomato are added. After a few minutes, orecchiette, or other short pasta, is added to complete the soup. The soup is garnished with the pistou, which is made with fresh basil, parmesan cheese, olive oil and garlic. And this soup can easily be made vegetarian, please just add a comment with your request when placing your order.
The bread companion this week is Pane Bianco. This delicious bread is filled with sun-dried tomatoes, parmesan cheese and fresh herbs, It's a perfectly tasty companion to this vegetable soup!!
On the menu for dessert this week are MINI REESE’S CHEESECAKES. If you are a fan of chocolate and peanut butter, these cheesecakes will not disappoint. Mini cheesecakes are the perfect size dessert to enjoy while not getting too full from dessert! The cheesecakes start with an Oreo crust that allows for a good chocolate base. The filling consists of creamy peanut butter cheesecake, with chopped mini Reese’s, that is just the right amount of sweetness. Next I place a chocolate ganache on top of the filling for an added crunch. Finally, the cheesecakes are topped with a chocolate whipped cream and a mini Reese on top.
