Week 134: Mediterranean Meatball Soup

I hope your summers are off to a good start ... in case you've missed me, I created a menu this week that's filled with things you love.  Including my favorite summer dessert from Jenny Sue Delights :-)

On the menu for MONDAY, JUNE 8th is MEDITERRANEAN MEATBALL SOUP with ITALIAN HERB BREAD.  Meatballs filled with fresh mint and garlic stand out in this Mediterranean-inspired soup, flavored with fresh pomegranate juice, diced toamtoes and fennel.  The soup begins with assembling the meatballs and browning them in the oven.  The meatballs are made with lean ground beef, eggs, breadcrumbs, garlic and fresh mint. 

Meanwhile, sliced fennel is sauteed in the pot in olive oil.  Once softened, chickpeas, diced tomatoes, fresh pomegranate juice and homemade chicken stock are added.  Once the soup begins to boil, the meatballs are dropped in along with chopped fresh kale.  The soup is garnished with pomegranate seeds and fresh parsley.  

The bread companion this week is my Italian Herb Bread.  This delicious bread is filled with garlic, butter and fresh herbs and tastes great dipped into this soup. 

On the menu for dessert are one of my most popular summer items - BLUEBERRY LEMON BARS.  I am so excited to be back offering desserts with Soup(er) Delivery! I will be around for only a few deliveries with Dana before we go on a summer break, but I will be here for any individual orders or events you would like sweet treats for!  These bars start with an irresistible shortbread crust. Then I place a creamy filling on top that is a silky smooth lemon flavor with a few blueberries included. Finally, the bars are topped with crumbled shortbread pieces that offer a slight crunch!
