Week 130: Spring Minestrone

As the days continue in quarantine, I am continually searching for things to follow that show change or forward progress (I'm sure many of you are in the same boat).  For me, the most exciting thing that continues to make forward progress is MPH Brewing.  The partners, which include my husband, are working hard each day to transform an old pizza restaurant into a new brewery for downtown Montgomery.  Each night I look forward to our walk down to the brewery to check on it ... it's so rewarding to see how close they are getting to pouring their first beer.  I know I'm not the only one who can't wait :-)

On the menu for MONDAY, APRIL 27th is SPRING MINESTRONE and PANE BIANCO. Minestrone soup orginates in Italy, and the name means "big soup" thanks to all the veggies thrown in.  This springtime version of the classic minestrone features springtime veggies, lemon zest and fresh herbs.  The soup begins with sauteing diced bacon in the pot ... a little bacon goes a long way in building the layers of flavors in this tasty soup!! 

Next, diced onions, celery, garlic and zucchini are dropped in.  Once softened, white beans, garbanzo beans and homemade chicken stock are added.  Once the soup comes to a boil, small pasta, fresh green beans and spinach are mixed in.  The soup is garnished with fresh herbs, lemon zest and parmesan cheese.  A vegetarian, gluten-free or dairy-free option of the soup is available, please add a note when placing your order.

The bread companion this week is Pane Bianco.  This tasty bread is filled with sun-dried tomatoes, fresh basil, garlic and shredded Italian cheeses.  It has a wonderful soft texture and is packed with flavor. 

**Please note that all soup is now delivered in disosable containers to avoid cross-contaimination, which is automatically added to your purchase.  And while we love seeing your faces when we make our deliveries ... for the time being we will be leaving your dinner on your front porch so we can avoid breaching social distancing guidelines.  All pick up orders will be from 5-6:30 PM  as Z Place is currently closed on Mondays during this crisis.  Thank you for your patience as I try to accomodate everyone under these unusual circumstances.
