
Week 123: Creamy Pierogie Soup

Thank you all for your kind words and being understanding over the past two weeks. I'm sorry I left you without soup during soup's season to shine. So, as promised, the menu this week will be an 'Ode to Winter ... a comforting, hearty soup that will warm you right up!!
On the menu for MONDAY, FEBRUARY 24th is CREAMY PIEROGI SOUP with SPICY CHEESY BREAD. This hearty and delicious soup combines mini pierogies with smoked sausage and fresh kale in a creamy broth your whole family will love.
Pierogies, native to Poland, are little purses made of noodle dough and filled with potato, onion and cheese. The soup begins with sauteing diced bacon in the pot until crispy. The bacon is removed and saved for a crispy garnish. Next, sliced kielsbasa sausage, carrots, onion, garlic and fresh thyme are added. Once the veggies are softened, a little flour is mixed in to start the roux that will help thicken the soup. Homemade chicken stock, mini pierogies, chopped fresh kale and a dash of nutmeg are mixed in next. Once the pierogies are cooked, the soup is garnished with the diced bacon and fresh parsley.
On the menu this week for bread is SPICY CHEESY BREAD. This chewy, cheesy bread is legendary in Wisconsin and was a bit hit last time I offered it. And while spicy is in the title of the bread, it is not overly spicy ... it's more like a little kick. This tasty bread is filled with two cheeses, Monterey Jack and Provolone, and has red pepper flakes in both the dough and topping to give it a signature flavor.
On the menu for desserts this week from Jenny Sue Delights are SWEET & SALTY EVERYTHING COOKIES. Delicious desserts are back! My oven and stand mixer have enjoyed their time off, but they are now ready to crank out sweet treats for you all! The cookie dough begins with browned butter - a favorite technique of mine that amplifies cookie flavor to next level deliciousness. Then I add in sea salt, butterscotch chips, chocolate chips and finally - chopped pretzels. These cookies are perfect for anyone that is a fan of sweet and salty food! - Jenny Sue Delights
