
Week 119: Roasted Root Vegetable Soup

I hope everyone enjoyed their holiday break and are ready to leap into the next decade. I was lucky enough to spend a lot of quality time with my friends and family and even sneak in a fun ski vacation. As you can tell by the late timing of this email, I'm struggling to get back into the swing of things ... so if you're anything like me, dinner delivery for the first Monday after break will be a huge help!
On the menu for MONDAY, JANUARY 6TH is ROASTED ROOT VEGETABLE SOUP with SPICY CHEESE BREAD. This new soup went over very well with my taste testers ... it's delicious, chocked full of roasted root vegetables that are pureed for added creaminess, and contains pillowy gnocchi that will melt in your mouth.
The soup begins with roasting carrots, small yellow potatoes, sweet potatoes, mushrooms and onion drizzled with olive oil and thyme in the oven. Once the veggies are tender and lightly browned, they are removed from the oven and pureed. A handful of the roasted veggies are not pureed, but diced, and then added to the soup at the end of cooking to help with the overall soup texture. The pureed vegetables, homemade chicken stock and thyme are then added to the pot and brought to a boil. Next, the gnocchi are dropped in. Gnocchi are simple dumplings made with potatoes, flour and egg yolk that are pillowy and tender. The soup is garnished with fresh parsley.
The bread companion this week is my newest bread, SPICY CHEESE BREAD. I learned about this delicious bread while driving in the car with my son listening to The Splendid Table on NPR. They made the bread sound so delicious that my son exclaimed, "Mom, you have to learn how to make that bread!" And so I did. This chewy, cheesy bread is legendary in Wisconsin and incorporates red pepper flakes into both the dough and the topping to give it a spicy kick.
