Week 118: Chicken Noodle Soup with Matzo Balls and Challah

I know we were warned that December would go by quickly since Thanksgiving was late in November ... yet somehow, I still find myself in shock at how fast the holidays are approaching. Days are flying by, I only wish I could cross items off my to do list with that speed. Yet, with all the added craziness of the season, I do love that it gives us more opportunities to see our neighbors, friends and family. Houses are cozy with fires and holiday decorations, while kitchens are filled with good food and festive drinks. I hope all of you enjoy the holiday season with your friends and family, hopefully I run into this season and we share a laugh (and maybe even a drink). Happy holidays!!

On the menu for MONDAY, DECEMBER 16th is CHICKEN NOODLE SOUP WITH MATZO BALLS and CHALLAH. As I've said before ...this is the first soup I ever ate, the first soup I learned to cook and the one people ask for nearly every week. And since this will be the last soup for 2019, it makes sense to serve the soup everyone wants. The soup is a simple one....whole amish chickens, quartered onions, celery sticks and more diced carrots than seems reasonable are dropped into a pot and covered with fresh water. Once the soup comes to a boil, it simmers for a few hours. Afterwards, the chicken is taken out, diced and dropped back in along with soft, pillowy matzo balls and thin egg noodles. While I put a fresh garnish on nearly everything I make, this soup I leave alone. It requires nothing. My bread companion this week is Challah, a soft, eggy bread coated in everything bagel seasoning that tastes so perfect dipped into the soup.

On the menu for dessert are CREAM CHEESE COOKIES N' CREAM COOKIES! There is one store bought cookie that I love - Oreo's! I'm sure I'm not the only one that can devour Oreo's at home, but they serve two purposes for me. The first of which is the old fashioned way of dipping them in a glass of milk, but the second purpose is baking with them! They are utilized in various types of dessert offerings, but these cookies are one of my favorite. When you add a slight amount of cream cheese, you get a creamy, soft, and absolutely delicious cookie. - Jenny from Jenny Sue Delights
